that's probably a brother or relative of the wife of Cayetano since, I think they're born at the same time as your Maria Josefa Vallejo

I have looked extensively at the Vallejo family of Jalostotitlan, and cannot unambigously place Maria Josefa.
There are, perhaps, three families. One is consistently "Espanol," the others are indio or mestizo. Maria Josefa is espanola, so she cannot be ot her the other two, but there are a number of espanol Vallejo men who could be her father, but identifying the right one eludes me.
I have looked through the indexes of the Guadalajara dispensas, and there are very few Vallejo's there.

"My" Cayetano Romo de Vivar consistently used the name Cayetano, and I find not evidence that he used other names. So this is too uncertain.
