Sombrerete is in northwestern Zacatecas on the way to Durnago. It was a very important stopover on the Camino Real de Adentro which went from Mexico City to New Mexico and was an important intermediary migration point for the pioneers to the Septentronial America (current American Southwest and Mexican North).
When you get back to the point where there are no more baptism or marriage records, you will likely have to start looking for notarial records of wills and endowments for churches, etc.
The Lobatos were pretty widely dispersed in Mexico (Mexico City, Puebla, Michoacan) by the late 1600s which makes me think there were several immigrants with this name or a very early immigrant who was very prolific.
The earliest Lobato immigrant was Pedro Lobato who migrated in 1549 from Valladolid.
There was also a person named Cristóbal Rodriguez Lobato who arrived in Mexico in 1604 to be part of the party accompanying Juan de Onate on his expedition to New Mexico. This is the list of people who came with him. You can view the document on Archivos Espanoles en Red

My name is Denise Lovato-Duran I have my Lobato line back to 1760's in Santa Fe, New Mexico. The first Lobato's came to New Mexico were Bartolome Lobato and his brother Matias came in 1695. The Lobato's were from Sombrete, Zacatacas. Recently I had my brother do his DNA and it turned out halogroup Q-3 which is Native American. I was surprised to find out I matched a male friend named Tafoya. He has his Tafoya's back to the 1600's in Michoacan. Both of us are Q-3 so we are Indio ,I read recently that the Spanish enslaved the tribe in Michoacan and sent them to work in the mines in Sombrete. It is possible that one ancestor stayed in Michoacan and was baptized Tafoya and the other went to Sombrete and was baptized a Lobato. I am very interested in researching baptism records in Sombrete.
