What do we do when we find that, for example, the parents named in one document are entirely different from those in another (I don't mean the difference between Jose and Josef, but entirely different people). I have a couple, Jose Vicente Gomes and Maria Joaquina Franco, who when they married gave there parents' names as: Groom: Francisco Gregorio Gomez and Maria Antonio Martin del Campo Bride: Manuel Julian Jimenez and Gertrudes Garcia de Alba
https://familysearch.org/pal:/MM9.3.1/TH-1-18447-45281-16?
Recently I found a baptism for their child which mentions the grandparents as:
Paternal: Vicente Gomez and Anna Maria Garcia de Alba
Maternal: Blas Franco and Angela Baldivia

Any suggestions?

Were you able to match up the ages of the bride and groom at their marriage? Does it make sense for the year the child was born. In other words, they weren't 80 when the child was born. Sometimes when you have such discrepancies you have to look at other things. You can trust marriage records more than birth because you know the "novios" were there and they gave much more reliable information. Your information was so far off, I wouldn't add it till I had more info to confirm. I think Angelina's advise is right on. I was just about to add an ancestor to my tree today because I thought I already had the parents on my tree. It was a Josefa Mier and Alejo Berumen. I had a Maria Josefa Berumen and Manuel Berumen. I figured he could have been Manuel Alejo Berumen, then I realized they were about 100 years apart. You find this happens often.

Conflict of information
Erlinda,
I have a Joseph Francisco Berumen b1761, father Miquel Berumen, La Estancia Tepetongo, mother Da. Maria Josefa Mier, originaria de ciudad Guadalupe en el puesto del Calcalote.
Very close, but I don't have Francisco's spouse yet. I have spent almost 75% of my time trying to find my 5X maternal grandfather.

Conflict of information
Zapvive1,
Keep in mind that a lot of the times the mother was not present during the
baptism since she was still recovering from childbirth and it was considered
a necessity to have the child baptized within days of birth; therefore, it
is common for mistakes to happen with the names of the maternal
grandparents. In this particular case, it looks like the scribe might have
mixed up the maternal grandmother (Gertrudis Garcia de Alba) with the
paternal grandmother (Maria Antonia ...) and came up with a new name (Anna
Maria Garcia de Alba). In any case, I would look for other children from
this marriage and try to resolve the difference in names that way. The other
possibility is that you are dealing with another couple...
Good Luck,
-Angelina-
Conflict of information
I would also look at the records right before and after, just in case of an
error. Its rare, but twice this year when Indexing I noticed that names
seem to have been "borrowed" from the record before or after, suggesting an
error by the scribe.
