If your grandfather was baptized in a catholic church, the records are
definitely as detailed as those in Mexico. The listing of great-grandparents
was a requirement under some sort of council and was mandated by the Vatican
beginning in 1810 or so.
Do you know what parrish in Laredo your grandfather was baptized in?

I was able to confirm that San Agustin church in Laredo does have my grandfather's baptism certificate, but I don't think it has the grandparents listed. At least according to the person I spoke to on the phone who was looking at it when she talked to me. I requested a copy of the certificate, so I can see for myself in a week or so.
I did learn one other piece of information from my grandfather, Jesus Maria Pineda. He remembers hearing that his father Nicanor had a half-brother, named Jesus Maria, for whom he was named. If my grandfather remembers correctly, he lived in Torreon where he worked for the government. I don't know if this Jesus Maria shared the same mother (Pioquinta) or father (Pedro Pineda/o) as Nicanor, although my grandfather thinks they shared the same father.
