Researching Lagos de Moreno Records I came across Fabricas. Lists of deaths, including cost and names. Is this the working of the 'hacienda'? Was the death then listed in the church records? Very curious. A wealth of info listed.

Fábricas are church funds. Basically these are ledgers. No, it wasn't the working of the hacienda.
